The world’s press crowded into the Beverly Hilton Hotel in Beverly Hills for the unveiling of the 76th annual Golden Globe Awards menu that will be served to exclusive star-studded guests on January 6th. Executive Chef Matthew Morgan, not only demonstrated how to create the mouth-watering menu but shared that the ingredients were inspired by the vegetable garden he cultivates at home. When you are serving the who’s who of the entertainment world you have to know that they sup on the finest cuisine. Morgan doesn’t feel the pressure, coming with the attitude that you make sure the best is on offer for any one individual and the 1500 strong throng should then be delighted and satiated. A rule of thumb is not to have any overpowering flavors. Nothing like curry that some patrons could be sensitive to.
This year the meal begins with a sweet Potato Vichyssoise, Wild Micro Chives - which the chef hand-planted himself six weeks ago - Golden Leeks, Organic Red Garnet Yams and Roasted Pepitas. Note that the colors embrace the theme of gold throughout. The entree is a Chilean Seabass, Forbidden Black Rice, White, and Green Asparagus, Globe Carrots, Crispy Herb Leaves, and sweet Pepper Concasse. For the vegetarian, the main course is a stuffed Honeynut Squash using Piquillo Pepper Hummus, Braised Rainbow Chard, Crispy Chickpeas, Quinoa, Golden Raisins, and Sunflower Sprouts.
Executive Pastry Chef Thomas Henzi has created a gluten-free dessert. The base is a flourless chocolate cake covered with a chocolate ganache glaze, topped with an amaretto cream cheese with a pistachio center topped with a white chocolate glaze. The Praline is a Cassis Strawberry dome with a dark chocolate decoration.
Of course, no meal would be complete without something to drink. While Moet et Chandon always flows a special cocktail has been concocted by actress and filmmaker Camilla Belle especially for the night. The Moet Belle consists of cachaça, mango juice, ginger syrup and lime juice shaken with ice, strained into a coupe and topped with Moet et Chandon Imperial Brut. The bubbly concoction is topped with a tropical flower decoration or an edible flower garnish.
The golden theme that runs throughout the menu and is visible in the vivid Moet Belle, is repeated in the flower centerpieces created by Mark’s Garden which are still maturing in the ground and will reach peak perfection on the night itself.
